This is a very filling and satisfying meal that also doubles for a sweet dessert. It tastes decadent but there is no fat so it's health and guilt free. It's also super simple and easy to make.

Apple Cinnamon Date Stack Recipe:
10-12 pitted Medjool dates
Approximately 1/2 cup of fresh coconut water or filtered water
1 Large crunchy apple like a Fuji
1/3 cup of raisins
a dash of vanilla powder or a couple drops of vanilla extract
a dash of ceylon cinnamon
*optional edible flower garnish
Soak medjool dates in a small amount of coconut water. Put medjool dates in a small bowl with just enough coconut water to not quite cover the dates. Push the dates down into the liquid with a fork and set aside for later.
In another small bowl add the raisins and just enough coconut water to cover the raisins. Set aside for later and allow to soak.
Using a julienne peeler, slice the apple into skinny strips. You can use a food processor with a grating blade instead, just be sure to core the apple and remove the seeds and stem before feeding into the processor.
Once your apple has been shredded, return to your dates which should be softer and easier to mix into a thick, creamy sauce. Add a dash of vanilla powder to the sauce and mix well.
In a mixing bowl, add apple and gently fold in date sauce until well mixed,
Drain the raisins and reserve a small handful for garnish, add to the remaining raisins to the bowl of apples, folding gently into the mixture.
Using a one cup measuring cup, pack in the apple date mixture into the cup then carefully turn upside down in the center of your serving plate. (Stainless steel measuring cups work great for this process because mixture slides out easily.) Do this process one more time for the remaining mixture by stacking directly on top of the first stack.
Smooth down the sides of the stack so it looks like one seamless stack. Add your raisin garnish, sprinkle with a nice dusting of cinnamon and top with an edible flower for garnish.
Enjoy as a main meal or a decadent dessert.
